Baked Veggie Taquitos Even Kiddos Will Love
What You’ll Need
2 cans of chickpeas
1 can Ro-Tel Original
2 tsp Olive Oil
1 Onion diced
1/2 Bell Pepper diced
1 Pack taco seasoning
2 cups shredded cheddar cheese
15 flour (or corn) Tortillas
The How To
Preheat oven to 400 degrees while prepping filling
Saute oil, diced onion and bell pepper for 5 minutes over medium heat
Add can of Rotel & taco seasoning packet. Cook until some of liquid has evaporated
Drain and rinse chickpeas, add to pan & cook for 5 minutes. Then mash bean mixture well. (it will be chunky)
Warm tortillas in microwave for 30 seconds so they do won’t split on you while rolling.
Place bean filling, cheese, and tortillas in an assembly line
Spray a 9 x13 baking dish generously so taquitos do not stick
Add 2-3 tablespoons of cheese to tortilla, then 2-3 tablespoons of filling. Wrap tortilla snuggly. Place finished tortilla in pan. Continue until pan is full.
Generously spray the top and sides of the tortillas in the pan. Bake for 15 minutes, bottoms should begin to crisp, if not bake for an additional 5 minutes. Flip and bake for additional 15 minutes until golden brown.
Let cool, and enjoy with your favorite latin inspired side dishes!
